Cowpea Fritters

Ingredients

1 cup nyemba/cowpeas, cooked and mashed

2 Tablespoon finely chopped onion

1 teaspoon salt

¼ teaspoon pepper

1 cup flour

3 level teaspoon baking powder

2 eggs, well beaten

Cooking oil for shallow frying

Cooking Instructions

  1. Boil cow peas until soft. Mash them and allow to cool.
  2. Mix together with seasoning, finely chopped onion, and two eggs.
  3. Sieve flour and baking powder together and add to the cowpeas mixture, mix well.
  4. Put cooking oil just enough cooking oil to cover slightly the base of a frying pan, heat over medium heat.
  5. Drop level tablespoonful of the mixture into hot oil and fry over medium heat until golden brown on both sides
  6. Drain on crumpled paper and serve piping hot for breakfast.

Serves 4
