Ingredients
1 cup nyemba/cowpeas, cooked and mashed
2 Tablespoon finely chopped onion
1 teaspoon salt
¼ teaspoon pepper
1 cup flour
3 level teaspoon baking powder
2 eggs, well beaten
Cooking oil for shallow frying
Cooking Instructions
- Boil cow peas until soft. Mash them and allow to cool.
- Mix together with seasoning, finely chopped onion, and two eggs.
- Sieve flour and baking powder together and add to the cowpeas mixture, mix well.
- Put cooking oil just enough cooking oil to cover slightly the base of a frying pan, heat over medium heat.
- Drop level tablespoonful of the mixture into hot oil and fry over medium heat until golden brown on both sides
- Drain on crumpled paper and serve piping hot for breakfast.
